Ingredients

Units Scale
  • For the Filling:
    • 2 cups Granny Smith apples, peeled, cored, and diced
    • 2 tablespoons granulated sugar
    • 2 tablespoons brown sugar
    • 1 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 1 teaspoon cornstarch
    • 1 teaspoon lemon juice
  • Additional Ingredients:
    • 8 egg roll wrappers
    • 4 oz cream cheese, softened
    • 2 tablespoons melted butter
    • 1/4 cup cinnamon-sugar mixture (2 tablespoons sugar + 1 teaspoon ground cinnamon)
  • For Serving (Optional):
    • Caramel dipping sauce
    • Vanilla ice cream

Instructions

  1. Prepare the Filling:
    • In a medium saucepan, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch.
    • Cook over medium heat, stirring occasionally, until the apples are tender and the mixture thickens (about 8–10 minutes). Stir in the lemon juice. Remove from heat and let cool.
  2. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean surface, with one corner facing you.
    • Spread a small amount of cream cheese (about 1/2 tablespoon) in the center of the wrapper.
    • Add 2 tablespoons of the apple filling on top of the cream cheese.
    • Fold the bottom corner over the filling, fold in the sides, and roll tightly, sealing the edge with a bit of water.
  3. Bake or Air-Fry:
    • Preheat your oven to 425°F (220°C) or your air fryer to 375°F (190°C).
    • Lightly brush or spray the egg rolls with melted butter.
    • If baking, place the egg rolls on a parchment-lined baking sheet and bake for 15–18 minutes, flipping halfway through.
    • If air-frying, cook for 10–12 minutes, flipping halfway through.
  4. Coat and Serve:
    • While still warm, toss the baked egg rolls in the cinnamon-sugar mixture.
    • Serve immediately with caramel dipping sauce or vanilla ice cream, if desired.
