- 2 cups Granny Smith apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice
- Additional Ingredients:
- 8 egg roll wrappers
- 4 oz cream cheese, softened
- 2 tablespoons melted butter
- 1/4 cup cinnamon-sugar mixture (2 tablespoons sugar + 1 teaspoon ground cinnamon)
- For Serving (Optional):
- Caramel dipping sauce
- Vanilla ice cream
Instructions
- Prepare the Filling:
- In a medium saucepan, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch.
- Cook over medium heat, stirring occasionally, until the apples are tender and the mixture thickens (about 8–10 minutes). Stir in the lemon juice. Remove from heat and let cool.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a clean surface, with one corner facing you.
- Spread a small amount of cream cheese (about 1/2 tablespoon) in the center of the wrapper.
- Add 2 tablespoons of the apple filling on top of the cream cheese.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly, sealing the edge with a bit of water.
- Bake or Air-Fry:
- Preheat your oven to 425°F (220°C) or your air fryer to 375°F (190°C).
- Lightly brush or spray the egg rolls with melted butter.
- If baking, place the egg rolls on a parchment-lined baking sheet and bake for 15–18 minutes, flipping halfway through.
- If air-frying, cook for 10–12 minutes, flipping halfway through.
- Coat and Serve:
- While still warm, toss the baked egg rolls in the cinnamon-sugar mixture.
- Serve immediately with caramel dipping sauce or vanilla ice cream, if desired.
