For the Lasagna:
- 12 lasagna noodles
- 4 cups shredded mozzarella cheese
For the Sauce:
- 1 tablespoon olive oil
- 1 1/2 pounds ground turkey
- 1 large carrot, peeled and diced
- 1 green bell pepper, diced
- 1 sweet onion, diced
- 4 garlic cloves, minced
- 2 teaspoons Italian seasoning
- 2 (25-ounce) jars marinara sauce
- 1 parmesan rind
- 1 dried bay leaf
- Salt and pepper to taste
- 1 cup spinach, roughly chopped
For the Ricotta Filling:
- 15 ounces whole-milk ricotta
- 1 large egg
- Juice of half a lemon
- 1/4 teaspoon fresh cracked black pepper
- 1 cup grated parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
Instructions
1. Make the Sauce:
- Heat olive oil in a large pot over medium-high heat.
- Add ground turkey and cook, breaking it up as it browns.
- Stir in diced carrot, bell pepper, and onion; cook for 4–5 minutes until the onion is translucent.
- Add garlic and Italian seasoning; cook for 1–2 more minutes.
- Stir in marinara sauce, parmesan rind, bay leaf, salt, and pepper. Cover and simmer for 15–20 minutes.
- Remove the bay leaf and stir in spinach until wilted.
2. Prepare the Ricotta Filling:
- Combine ricotta, egg, lemon juice, black pepper, parmesan cheese, parsley, and basil in a bowl. Mix well.
3. Cook the Lasagna Noodles:
- Boil salted water in a large pot.
- Add noodles and cook for 8 minutes. Drain and set aside.
4. Assemble the Lasagna:
- Preheat the oven to 400°F (200°C).
- Spread 1 cup of sauce on the bottom of a casserole dish. Place 4 lasagna noodles lengthwise.
- Layer with ½ cup ricotta mixture, 1¼ cups mozzarella, and 2 cups marinara sauce.
- Repeat layers, ending with noodles and sauce (no mozzarella).
5. Bake the Lasagna:
- Bake uncovered for 25 minutes.
- Remove from oven, add the remaining mozzarella, and bake for 15–20 minutes until golden and bubbly.
6. Rest and Serve:
- Let the lasagna sit for 15–20 minutes before serving.
- Garnish with grated parmesan and fresh basil.
