- 1 cup creamy peanut butter (e.g., JIF or Peter Pan)
- 1 cup granulated sugar (plus extra for rolling)
- 1 large egg
- 1 teaspoon vanilla extract (optional but recommended)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. - Mix the Dough:
In a large mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Stir until well combined and the dough forms. - Shape the Cookies:
Scoop out small amounts of dough and roll into 1-inch balls. Roll each ball in granulated sugar to coat. Place the balls on the prepared baking sheet, spaced about 2 inches apart. - Flatten the Cookies:
Use a fork to press a crisscross pattern into the top of each cookie, flattening them slightly. - Bake:
Bake in the preheated oven for 12–15 minutes, or until the edges are set and lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
